I’m still working on that lil h/c Guardian fic. It’s not going to be an epic, gourmet feast, but it will very likely make a nice snack. People like Hot Cheetos and Twinkies and those jars of salsa con queso, right? I mean, they buy it and eat it. I hope that when I’m finished with this fic, it’s the equivalent of a nice “fresh” salsa, the kind you buy in the refrigerated section. It’s not Pace (which is also fine), it’s not homemade or from that great little taco truck, but it’s not too shabby.

A haha, the snippet. Yes.

“Li Qian called me,” he said after a long, uncomfortable silence. “Have you eaten anything?”

“Yunlan, I—“

“Anything at all? A snack? I know you had breakfast.”

“Yunlan, I just—“

Zhao Yunlan held up a hand. “Nope. I don’t need any excuses, Shen Wei. No explanations. Just a simple yes or no — have you eaten since breakfast?”

“No.”

:D It is taking a lot of willpower not to go buy myself some terrible salsa con queso rn. I do not need to eat a jar of cheese dip, even if I manage to make it last a week or so.

I may have put (what I hope are) ingredients for passable con queso in the grocery order that C picked up today. The couple of jarred ones I've tried haven't been close enough to the stuff from the Tex Mex place I like, which is increasingly hard to find outside Ottawa.

*g* I mean, what I got from the store to make con queso with is mainly Velveeta and...is it called Rotel? A canned tomato+peppers thing? (Mild, in our case. For my sake, not scruloose's.) And some whipping cream, because that was mentioned when I was comparing recipes.

Yes, Rotel — we have a family casserole that is chicken, cheese, cream of chicken soup, rotell and torn up corn tortillas. It kind of is like adding chicken to cheese sauce. I have made cheese sauce from scratch, with a roux and milk and then adding cheese, but honestly, the Velveeta stuff just works better. I know it always ends up on lists of “things Americans eat that shock the rest of the world!” but *shrugs* it’s like the “ex you keep hooking up with especially when you’re drunk” of the food world.

Evidently the trick to getting regular cheese to melt beautifully like Velveeta is to add sodium citrate, and I'm hoping to pick some up to give that a try sometime. (I think it has to be ordered from specialty places, but at least it doesn't seem to be expensive.) But in the meantime, I have my fingers crossed for liking the Velveeta/Rotel outcome. ^_^

Oh interesting! That makes it really seem like science. The roux/milk version was fine but also a bit starchy? Idk I only tried it twice. I think I’m gonna make pasta this week. We have my great grandma’s hand roller and also an attachment for the mixer. That will be my next experiment. I look forward to hearing about your cheese sauce results!

We made the basic Velveeta/Rotel and liked it pretty well! We might try adding a bit more liquid (a very little bit) next time.
