Oh interesting! That makes it really seem like science. The roux/milk version was fine but also a bit starchy? Idk I only tried it twice. I think I’m gonna make pasta this week. We have my great grandma’s hand roller and also an attachment for the mixer. That will be my next experiment. I look forward to hearing about your cheese sauce results!
